The Easiest Pumpkin Chocolate Chip Cookie Recipe

...and an easy peasy modification

So, the reality of this post is that I had already made this recipe back in early October with intent to nail a quality photo taken by moi vs borrowed from le web, but I kept eating them, and then I'd have a bad nail day, or be rushing to the next thing to be done, you get the point. This was a dangerous game for me! I made about 6-8 medium sized cookies a batch...one a day will take you through the entire week! But I digress, there's no better time to be a Cookie Monster than the fall and winter months.. pumpkin cookies and pies, then Christmas cookies and baked goods galore not to mention the actual dinners of choice, truly heaven.
This took no more than 30 minutes to prepare and bake. I made two separate batches, the first time with coconut and canola oil since I forgot butter, and then only butter the second time. but all we need is:
Cookie Mix
Butter/Oil
1 Egg
2 tablespoons of water
1/2 can of Pumpkin Puree
My only modification would only be to add cinnamon, pumpkin or nutmeg spices for more pumpkin spice flavor, honestly mine weren't pumpkin-y enough!
Form and lay the cookies on a sheet pan and when the oven heats to 375, bake cookies for 18-22 min!
Nibble solo or as an ice cream sandwich and enjoy!
